What's the point of docking/posting a dog's ears/tails?

I don't know much about standards and such on dogs. I've always heard of cutting the ears and tails but why exactly would you want to do this? It seems like mutilation to me, similar to declawing a cat. I understand this might be a breed standard but how would cutting off a body part become a standard?
