I bought 2 new quakers and I need some questions answered can you help?

I bought 2 quakers from a flea market a few days ago the guy told me its a male and female and they are 8 months. Does anyone know if you can tell how old they are by looking at them? Im not sure if the guy was telling the truth. The next problem that I am having is they really dont want anything to do with me or my husband they scream when we try to take them out while there out they bite and try to fly and run away. We want to be able to hold them and have them come out of the cage on there own and have them come to us instead of picking them up.
