Am I headed for diabetes?

I've been on a low carb diet for about 2 months now, trying to lose some weight. Tonight's dinner was chicken, stir fried in peanut oil with red and green peppers, broccoli, and a small amount of carrot, onion, and cashews. No rice for me, and only some chicken broth and some soy sauce for flavor. My mother's dinner, on the other hand, was the same except that she had rice with hers, and she used a teriyaki sauce (had sugar in it) for flavor. Then she followed that up with an ice cream sandwich. My dad has diabetes, so about 25 minutes after dinner, I got out his testing stuff and checked my blood sugar against my mother's. Mine was 111, while hers was 95. WTF? I'm SO confused. I don't understand why hers was so low... and even more perplexing than that... why was mine 16 points higher?? Anyone that knows anything about diabetes, blood sugar, or low carb diets please answer?
